Tomato Chicken Pasta

Ingredients:

- 2 tablespoons olive oil

- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound chicken, cut into cubes
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces uncooked pasta

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the chicken and cook until lightly browned, about 5 minutes.

4. Add the diced tomatoes, salt, and pepper and stir to combine.

5. Reduce the heat to low and simmer for 10 minutes.

6. Meanwhile, bring a large pot of salted water to a boil.

7. Add the pasta and cook according to package directions.

8. Drain the pasta and add it to the skillet with the chicken and tomato mixture.

9. Stir to combine and cook for an additional 5 minutes.

10. Serve hot. Enjoy!
