Garlic Chicken with Carrots and Onions

Ingredients:

- 2 chicken breasts
- 1 onion, chopped
- 2 carrots, chopped
- 1 tomato, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:

1. Preheat oven to 375 degrees F.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add chicken breasts and cook for 3-4 minutes per side, or until golden brown and cooked through.

4. Remove chicken from the skillet and set aside.

5. Add onion, carrots, and tomato to the skillet and cook for 5 minutes, stirring occasionally.

6. Add garlic, salt, and pepper, and cook for an additional 2 minutes.

7. Place chicken breasts in a baking dish and top with the vegetables.

8. Bake for 15-20 minutes, or until chicken is cooked through.

9. Serve and enjoy!
