Cheesy Chicken and Rice

Ingredients:

- 2 cups of cooked white rice

- 2 boneless, skinless chicken breasts, cut into cubes
- 2 eggs, lightly beaten
- 1 cup shredded cheese (cheddar or mozzarella work well)
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced

Instructions:

1. Preheat oven to 350°F.

2. In a large skillet over medium heat, cook chicken cubes until lightly browned.

3. In a large bowl, combine cooked chicken, cooked rice, eggs, cheese, onion, bell pepper, and garlic. Mix until all ingredients are evenly distributed.

4. Grease a 9x13 inch baking dish and pour mixture into the dish.

5. Bake in preheated oven for 30 minutes, or until cheese is melted and bubbly.

6. Serve and enjoy!
