Pork Fillet with Roasted Garlic and Courgettes

Ingredients:

- 2 pork fillets
- 2 cloves of garlic, peeled and sliced
- 2 courgettes, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. Place the pork fillets in a baking dish.

3. In a separate bowl, combine the garlic, courgettes, olive oil, salt, and pepper. Mix until everything is evenly coated.

4. Spread the garlic and courgette mixture over the pork fillets.

5. Bake in the preheated oven for 25-30 minutes, or until the pork is cooked through.

6. Serve hot. Enjoy!
