Lime-Chili Chicken and Rice
Ingredients:
-2 boneless, skinless chicken breasts
-1 cup of uncooked white rice
-1 onion, diced
-2 cloves of garlic, minced
-1 lime, juiced
-1 teaspoon of chili flakes
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large bowl, combine the diced onion, minced garlic, chili flakes, lime juice, salt, and pepper.
3. Add the chicken breasts to the bowl and coat them with the mixture.
4. Place the chicken in a baking dish and bake for 25 minutes.
5. Meanwhile, cook the rice according to package instructions.
6. Once the chicken is cooked through, remove it from the oven and let it rest for 5 minutes before slicing.
7. Serve the chicken over the cooked rice and enjoy!
