Avocado Chicken Fried Rice

Ingredients:

- 2 tablespoons of olive oil
- 1/2 cup of diced chicken
- 1/2 cup of cooked white rice
- 1/2 of a ripe avocado, diced
- 2 eggs, lightly beaten
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of salt

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced chicken and cook until golden brown and cooked through, about 5 minutes.

3. Add the cooked rice and diced avocado and stir to combine.

4. Pour the beaten eggs over the top and stir to combine.

5. Sprinkle the garlic powder, black pepper, and salt over the top and stir to combine.

6. Cook until the eggs are cooked through and the rice is heated through, about 5 minutes.

7. Serve hot and enjoy!
