Tomato Rice
Ingredients:
- 1 cup of white rice
- 1 large tomato, diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 cups of water
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a large saucepan over medium heat.
2. Add onion and garlic and sauté until softened, about 5 minutes.
3. Add diced tomato and cook for an additional 2 minutes.
4. Add rice and stir to combine.
5. Add water and bring to a boil.
6. Reduce heat to low and cover. Simmer for 15 minutes or until rice is tender.
7. Season with salt and pepper to taste.
8. Serve and enjoy!
