Garlic and Onion Chicken with Rice
Ingredients:
- 2 cups of uncooked white rice
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 cups of chicken broth
- Salt and pepper to taste
Instructions:
1. In a large pot, heat the olive oil over medium-high heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the chicken cubes and cook until the chicken is cooked through, about 8 minutes.
4. Add the chicken broth and bring to a boil.
5. Add the rice and stir to combine.
6. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.
7. Season with salt and pepper to taste.
8. Serve hot. Enjoy!
