Garlic and Onion Spiced Pasta with Rucola

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 2 carrots, peeled and diced
- 2 cups rucola, chopped
- 8 ounces dry pasta of your choice

Instructions:

1. Bring a large pot of salted water to a boil.

2. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.

3. Add the oregano, basil, and pepper and stir to combine.

4. Add the carrots and cook for another 5 minutes.

5. Add the rucola and cook for another 3 minutes.

6. Add the pasta to the boiling water and cook according to package instructions.

7. Drain the pasta and add it to the skillet with the vegetables. Stir to combine.

8. Serve the pasta with the vegetables and enjoy!
