Garlic and Onion Roasted Potatoes
Ingredients:
-3 large potatoes, peeled and cut into 1-inch cubes
-1 large onion, diced
-3 cloves garlic, minced
-3 tablespoons olive oil
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine the potatoes, onion, garlic, olive oil, oregano, thyme, and salt and pepper. Toss to combine.
3. Spread the mixture onto a large baking sheet.
4. Bake in preheated oven for 30-35 minutes, stirring occasionally, until potatoes are tender and golden brown.
5. Serve warm. Enjoy!
