Garlic Basil Chicken and Salmon Rice Bowl

Ingredients:

- 2 chicken breasts, cut into cubes
- 2 cups cooked white rice
- 2 cloves garlic, minced
- 2 eggs, beaten
- 2 tablespoons fresh basil, chopped
- 1/2 red onion, diced
- 4 ounces cooked salmon, flaked
- 2 potatoes, diced

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine chicken cubes, garlic, eggs, basil, red onion, and potatoes.

3. Spread mixture onto a baking sheet and bake for 25 minutes, or until chicken is cooked through.

4. Meanwhile, in a medium saucepan, cook rice according to package instructions.

5. Once chicken is cooked, add it to the cooked rice and stir to combine.

6. Add flaked salmon and stir to combine.

7. Serve warm. Enjoy!
