Garlic Chicken and Potato Bake
Ingredients:
- 2 large chicken breasts
- 2 cloves of garlic, minced
- 2 large potatoes, peeled and diced
- 1 cup of frozen peas
- 1 cup of frozen corn
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine the diced potatoes, peas, corn, garlic, olive oil, salt and pepper. Mix until all ingredients are evenly distributed.
3. Place the chicken breasts in a baking dish. Top with the potato mixture.
4. Bake in preheated oven for 45 minutes, or until chicken is cooked through and potatoes are tender.
5. Serve and enjoy!
