Make Garlic Chicken and Rice

Garlic Chicken and Rice

Ingredients:

-2 tablespoons olive oil
-1 large onion, diced
-2 bell peppers, diced
-3 cloves garlic, minced
-1 pound boneless, skinless chicken breasts, cut into cubes
-1 teaspoon ground cumin
-1 teaspoon chili powder
-1 teaspoon paprika
-1 teaspoon salt
-1/2 teaspoon black pepper
-1 cup uncooked long grain white rice
-2 cups chicken broth

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion and bell peppers and cook until they are softened, about 5 minutes.

3. Add the garlic and cook for an additional minute.

4. Add the chicken cubes and cook until they are no longer pink, about 5 minutes.

5. Add the cumin, chili powder, paprika, salt, and black pepper and stir to combine.

6. Add the rice and chicken broth and stir to combine.

7. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.

8. Simmer for 20 minutes, or until the rice is cooked through and the liquid is absorbed.

9. Serve with your favorite toppings and enjoy!
