Garlic Chicken and Rice
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup long grain white rice
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally, until the onion is softened.
3. Add the rice and stir to combine.
4. Pour in the chicken broth and season with salt and pepper.
5. Bring the mixture to a boil, then reduce the heat to low and cover.
6. Simmer for 15 minutes, stirring occasionally.
7. Add the chicken cubes and stir to combine.
8. Cover and cook for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
9. Serve warm. Enjoy!
