Garlic Chicken and Rice Bake
Ingredients:
- 2 cups cooked white rice
- 2 cups brussel sprouts, trimmed and halved
- 2 cups spinach
- 2 boneless, skinless chicken breasts, cubed
- 2 cloves minced garlic
- 1 cup shredded mozzarella cheese
- 2 eggs, lightly beaten
Instructions:
1. Preheat oven to 350°F.
2. Grease a 9x13 inch baking dish.
3. Spread cooked rice in the bottom of the baking dish.
4. Top with brussel sprouts, spinach, and cubed chicken.
5. Sprinkle garlic over the top.
6. In a small bowl, whisk together eggs and pour over the top of the dish.
7. Top with mozzarella cheese.
8. Bake for 25-30 minutes, or until chicken is cooked through and cheese is melted and bubbly.
9. Serve and enjoy!
