Garlic Chicken and Veggie Bake
Ingredients:
- 2 large chicken breasts
- 4 cloves of garlic, minced
- 4 medium potatoes, peeled and cubed
- 1 cup of frozen peas
- 1 cup of frozen corn
- 1 teaspoon of paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F.
2. In a large bowl, combine the potatoes, peas, corn, paprika, garlic powder, onion powder, oregano, thyme, olive oil, salt, and pepper. Mix until everything is evenly coated.
3. Place the chicken breasts in a baking dish and top with the garlic.
4. Pour the potato and veggie mixture over the chicken and spread out evenly.
5. Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
6. Serve and enjoy!
