Garlic Fish and Chicken with Potatoes
Ingredients:
- 2 potatoes, peeled and diced
- 2 cloves of garlic, minced
- 2 fillets of fish
- 2 boneless, skinless chicken breasts
- 1 cucumber, diced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place the potatoes in a baking dish and drizzle with 1 tablespoon of olive oil. Sprinkle with salt and pepper and bake for 25 minutes, or until potatoes are tender.
3. Meanwhile, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the garlic and cook for 1 minute.
4. Add the fish and chicken to the skillet and season with salt and pepper. Cook for 5-7 minutes, or until the fish and chicken are cooked through.
5. Add the cucumber to the skillet and cook for 2 minutes, or until the cucumber is softened.
6. Serve the fish and chicken with the potatoes and cucumber. Enjoy!
