Garlic Fish Fried Rice

Ingredients:

- 2 cups cooked rice
- 2 eggs
- 2 tablespoons olive oil
- 1/2 onion, diced
- 1/2 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced tomatoes
- 1/2 pound fish fillets, cut into cubes

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and sauté for 2-3 minutes until the onion is softened.

3. Add the salt, pepper, tomatoes, and fish and cook for 3-4 minutes until the fish is cooked through.

4. Add the cooked rice and stir to combine.

5. Push the rice mixture to the side of the skillet and crack the eggs into the empty side.

6. Scramble the eggs until cooked through, then mix them into the rice.

7. Cook for an additional 3-4 minutes, stirring occasionally, until everything is heated through.

8. Serve hot. Enjoy!
