Garlic-Lemon Baked Salmon with Spinach and Rice

Ingredients:
- 2 salmon fillets
- 2 cups cooked white rice
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. Place salmon fillets in a baking dish.

3. In a small bowl, combine minced garlic, olive oil, lemon juice, salt, and pepper. Mix together until well combined.

4. Pour garlic-lemon mixture over the salmon fillets.

5. Bake in preheated oven for 15 minutes.

6. Meanwhile, in a medium-sized saucepan, heat cooked white rice and spinach over medium heat until spinach is wilted.

7. Once salmon is cooked, remove from oven and flake with a fork.

8. Serve salmon over spinach and rice. Enjoy!
