Christophine and Garlic Stew
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large christophines, peeled and cubed
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup vegetable broth
- 2 tablespoons freshly chopped parsley
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally, until the onion is softened.
3. Add the christophine cubes and cook for an additional 3-4 minutes, stirring occasionally.
4. Add the cumin, smoked paprika, oregano, salt, and pepper and stir to combine.
5. Pour in the vegetable broth and bring the mixture to a simmer.
6. Reduce the heat to low and cover the skillet. Simmer for 15-20 minutes, stirring occasionally, until the christophine is tender.
7. Remove the skillet from the heat and stir in the parsley.
8. Serve the stew warm. Enjoy!
