Garlic and Red Pepper Aubergine Oil Pasta

Ingredients:

- 2 tablespoons of aubergine oil
- 2 cloves of garlic, minced
- 1 red pepper, diced
- 8 ounces of your favorite pasta
- Salt and pepper, to taste

Instructions:

1. Bring a pot of salted water to a boil and cook the pasta according to package instructions.

2. Meanwhile, heat the aubergine oil in a large skillet over medium heat. Add the garlic and red pepper and cook for 2-3 minutes, stirring occasionally.

3. Drain the cooked pasta and add it to the skillet with the garlic and red pepper. Stir to combine.

4. Season with salt and pepper, to taste.

5. Serve hot and enjoy!
