Garlic Red Wine Kale Pasta
Ingredients:
- 2 cloves of garlic, minced
- 1/2 cup of red wine
- 2 cups of kale, chopped
- 1 carrot, diced
- 1/4 teaspoon of salt
- 2 tablespoons of olive oil
- 8 ounces of pasta of your choice
Instructions:
1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes, until fragrant.
3. Add the red wine and bring to a simmer.
4. Add the kale and carrot and cook for 3-4 minutes, until the vegetables are tender.
5. Drain the pasta and add it to the skillet with the vegetables. Stir to combine.
6. Season with salt and serve. Enjoy!
