Garlic Salmon with Spinach and Potatoes

Ingredients:

- 2 salmon fillets
- 2 cloves of garlic, minced
- 2 cups of spinach, chopped
- 2 potatoes, diced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
- 2 cups of cooked pasta

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute.

3. Add potatoes and cook for 5 minutes, stirring occasionally.

4. Add spinach and cook for an additional 2 minutes.

5. Place salmon fillets in a baking dish and season with salt and pepper.

6. Top salmon with spinach and potato mixture.

7. Bake in preheated oven for 15-20 minutes, or until salmon is cooked through.

8. Serve with cooked pasta. Enjoy!
