Garlic Tomato Noodle Bowl

Ingredients:

- 2 cups cooked rice noodles
- 2 eggs
- 1/2 cup tomato sauce
- 2 cloves minced garlic
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1/4 cup chopped cilantro
- 1/2 cup cooked black beans

Instructions:

1. Cook the rice noodles according to package instructions.

2. In a medium skillet, heat a tablespoon of oil over medium heat. Add the eggs and scramble until cooked through.

3. Add the tomato sauce, garlic, oregano, thyme, and black beans to the skillet and stir to combine. Cook for 5 minutes, stirring occasionally.

4. Add the cooked noodles to the skillet and stir to combine. Cook for an additional 2 minutes.

5. Serve the noodle mixture in bowls and top with the chopped cilantro. Enjoy!
