Ginger Chicken and Vegetable Pasta

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 cups mixed vegetables (such as carrots, bell peppers, and broccoli)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup low-sodium chicken broth
- 2 tablespoons soy sauce
- 8 ounces whole-wheat pasta

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the garlic and ginger and cook for 1 minute.

2. Add the chicken and cook until lightly browned, about 5 minutes.

3. Add the vegetables, salt, and pepper and cook until the vegetables are tender, about 5 minutes.

4. Add the chicken broth and soy sauce and bring to a simmer.

5. Meanwhile, cook the pasta according to package instructions.

6. Drain the pasta and add it to the skillet with the chicken and vegetables. Stir to combine.

7. Serve the ginger chicken and vegetable pasta warm. Enjoy!
