Ginger Chicken with Rice

Ingredients:

- 2 tablespoons of soja sauce
- 2 cups of cooked white rice
- 1 cup of grated cheddar cheese
- 1 tomato, diced
- 1/4 cup of sliced olives
- 1 tablespoon of freshly grated ginger
- 2 boneless, skinless chicken breasts, cut into cubes
- Juice of 1/2 green lime

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, combine soja sauce, grated ginger, and lime juice. Add chicken cubes and mix until chicken is evenly coated.

3. Spread chicken cubes in an even layer on a baking sheet. Bake in preheated oven for 15-20 minutes, or until chicken is cooked through.

4. Meanwhile, in a large saucepan, heat olive oil over medium heat. Add diced tomato and olives and cook for 3-4 minutes, or until vegetables are softened.

5. Add cooked rice to the saucepan and stir to combine. Cook for an additional 2-3 minutes, or until heated through.

6. To assemble, spoon rice mixture onto a plate and top with chicken cubes. Sprinkle with grated cheddar cheese and serve. Enjoy!
