Ginger Coconut Chicken

Ingredients:

- 2 boneless, skinless chicken breasts
- 2 tablespoons of freshly grated ginger
- 1 teaspoon of freshly ground black pepper
- 1 teaspoon of chilli powder
- 2 tablespoons of soy sauce
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 tomato, diced
- 2 tablespoons of coconut oil

Instructions:

1. Preheat oven to 375 degrees F.

2. In a small bowl, mix together the ginger, black pepper, chilli powder, soy sauce, salt, and sugar.

3. Place the chicken breasts in a baking dish and pour the ginger mixture over the chicken.

4. Top with the diced tomato and drizzle with the coconut oil.

5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.

6. Serve hot and enjoy!
