Ginger Garlic Chicken and Veggie Rice Bowl

Ingredients:

-1 cup uncooked white rice
-1/2 cup frozen corn
-1/2 cup diced eggplant
-1/2 cup diced onion
-1/2 cup grated cheese
-1/2 cup diced carrot
-1/2 cup diced sweet potato
-1/2 cup diced chicken
-2 cloves garlic, minced
-1 teaspoon freshly grated ginger

Instructions:

1. Cook the rice according to package instructions.

2. Heat a large skillet over medium-high heat. Add the chicken, onion, garlic, ginger, and a pinch of salt and pepper. Cook until the chicken is cooked through, about 8 minutes.

3. Add the eggplant, carrot, sweet potato, and corn to the skillet. Cook until the vegetables are tender, about 5 minutes.

4. Add the cooked rice to the skillet and stir to combine.

5. Sprinkle the grated cheese over the top and cook until the cheese is melted, about 2 minutes.

6. Serve the ginger garlic chicken and veggie rice bowl warm. Enjoy!
