Ginger Garlic Chicken Salad

Ingredients:

-1 lb of boneless, skinless chicken breasts
-2 cloves of garlic, minced
-1 teaspoon of fresh ginger, minced
-1 teaspoon of salt
-1/2 teaspoon of black pepper
-1 avocado, diced
-4 slices of bacon, cooked and crumbled
-2 cups of lettuce, chopped
-2 tomatoes, diced
-2 cups of kale, chopped

Instructions:

1. Preheat oven to 375 degrees F.

2. Place chicken breasts on a baking sheet and season with garlic, ginger, salt, and pepper.

3. Bake for 20-25 minutes, or until chicken is cooked through.

4. Let chicken cool before chopping into cubes.

5. In a large bowl, combine chicken cubes, avocado, bacon, lettuce, tomatoes, and kale.

6. Toss to combine.

7. Serve immediately. Enjoy!
