Ginger-Glazed Chicken and Vegetable Skillet

Ingredients:

- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 cups diced potatoes
- 2 cups diced carrots
- 1 cup cooked white beans
- 1/4 cup chicken broth
- 2 tablespoons honey
- 2 tablespoons soy sauce
- Salt and freshly ground black pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken and cook until lightly browned, about 5 minutes.

3. Add the garlic and ginger and cook for 1 minute.

4. Add the potatoes, carrots, white beans, chicken broth, honey, and soy sauce. Stir to combine.

5. Reduce the heat to medium-low and simmer until the vegetables are tender and the chicken is cooked through, about 15 minutes.

6. Season with salt and pepper, to taste.

7. Serve hot. Enjoy!
