Ginger Leek and Mushroom Potato Bake

Ingredients:
- 2 large potatoes, peeled and diced
- 1 leek, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped

Instructions:
1. Preheat oven to 375°F.

2. In a large bowl, combine potatoes, leek, garlic, ginger, mushrooms, olive oil, thyme, salt, and pepper. Mix until all ingredients are evenly distributed.

3. Transfer mixture to a greased baking dish.

4. Bake for 30-35 minutes, or until potatoes are tender.

5. Sprinkle with parsley and serve. Enjoy!
