Ginger Peanut Chicken and Broccoli
Ingredients:
2 boneless, skinless chicken breasts
1 head of broccoli, cut into florets
1 tablespoon freshly grated ginger
2 tablespoons soy sauce
2 tablespoons peanut butter
2 cups cooked white rice
Instructions:
1. Preheat oven to 375°F.
2. Place chicken breasts in a baking dish and season with salt and pepper.
3. In a small bowl, mix together the ginger, soy sauce, and peanut butter until combined.
4. Spread the mixture over the chicken breasts.
5. Place the broccoli florets around the chicken breasts.
6. Bake in preheated oven for 25 minutes, or until chicken is cooked through.
7. Serve over cooked white rice. Enjoy!
