Ginger-Pepper Salmon and Rice

Ingredients:

-1 lb boneless, skinless chicken breasts, cut into cubes
-1 cup uncooked white rice
-1 lb salmon fillet, cut into cubes
-1 teaspoon freshly ground black pepper
-1 teaspoon freshly grated ginger
-2 tablespoons olive oil
-2 cloves garlic, minced
-1/2 cup chicken broth
-1/4 cup soy sauce

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook for 4-5 minutes, stirring occasionally, until the chicken is cooked through.

3. Add the garlic and ginger and cook for 1 minute, stirring constantly.

4. Add the rice and stir to combine.

5. Pour in the chicken broth and soy sauce and stir to combine.

6. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.

7. Simmer for 15 minutes, stirring occasionally.

8. Add the salmon cubes and pepper and stir to combine.

9. Cover the skillet and cook for an additional 10 minutes, or until the salmon is cooked through and the rice is tender.

10. Serve hot. Enjoy!
