Gluten Free Baked Cod and Broccoli
Ingredients:
- 2 frozen cod fillets
- Salt and pepper, to taste
- Juice of 1 lemon
- 1/2 cup gluten free flour
- 1/2 cup gluten free breadcrumbs
- 2 eggs, beaten
- 1 cup frozen broccoli
Instructions:
1. Preheat oven to 375°F.
2. Place cod fillets on a greased baking sheet. Sprinkle with salt and pepper, and squeeze lemon juice over top.
3. In a shallow bowl, combine gluten free flour and breadcrumbs. In a separate bowl, beat eggs.
4. Dip cod fillets in egg mixture, then coat with flour and breadcrumb mixture.
5. Bake cod for 15 minutes.
6. Meanwhile, steam broccoli in a pot of boiling water for 5 minutes.
7. Remove cod from oven and top with steamed broccoli. Bake for an additional 10 minutes, or until cod is cooked through.
8. Serve cod and broccoli with a side of your favorite sauce. Enjoy!
