Goat Cheese and Mushroom Psyllium Crustless Quiche
Ingredients:
- 4 ounces of goat cheese, crumbled
- 2 tablespoons of psyllium husk
- 1 very small mushroom, finely chopped
- 2 eggs
- 2 tablespoons of milk
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a medium bowl, combine the goat cheese, psyllium husk, and mushroom.
3. In a separate bowl, whisk together the eggs and milk.
4. Pour the egg mixture into the goat cheese mixture and stir until combined.
5. Grease a pie plate or baking dish with butter or cooking spray.
6. Pour the quiche mixture into the dish and spread evenly.
7. Bake for 25-30 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
8. Let cool for 5 minutes before serving. Enjoy!
