Goat Cheese and Potato Gratin
Ingredients:
-2 tablespoons olive oil
-1 onion, diced
-2 carrots, diced
-2 potatoes, peeled and sliced
-3 cloves garlic, minced
-1 teaspoon dried parsley
-Salt and pepper to taste
-4 ounces goat cheese, crumbled
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Heat olive oil in a large skillet over medium heat. Add onion and carrots and cook until softened, about 5 minutes.
3. Add potatoes, garlic, parsley, salt, and pepper. Cook for an additional 5 minutes.
4. Transfer the mixture to a greased 9x13 inch baking dish.
5. Sprinkle the goat cheese over the top of the vegetables.
6. Bake for 25-30 minutes, or until the potatoes are tender and the cheese is melted and golden.
7. Serve warm. Enjoy!
