Goat Cheese and Walnut Beet Salad
Ingredients:
- 2 cups shredded red beet
- 2 cups shredded carrot
- 1/2 cup crumbled goat cheese
- 1/2 cup chopped walnuts
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Spread the walnuts on a baking sheet and bake for 8-10 minutes, until lightly toasted. Set aside.
3. In a large bowl, combine the shredded red beet and carrot.
4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt and pepper.
5. Pour the dressing over the beet and carrot mixture and toss to combine.
6. Add the crumbled goat cheese and toasted walnuts and toss again.
7. Serve immediately or chill in the refrigerator for up to 2 days. Enjoy!
