Greek Chicken and Rice Bowl

Ingredients:

-1 cup of uncooked rice
-1 pound of chicken breasts, cut into cubes
-2 cucumbers, diced
-2 bell peppers, diced
-1/2 cup of Greek yogurt
-2 cloves of garlic, minced
-2 tablespoons of olive oil

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine the chicken cubes, cucumbers, bell peppers, garlic, and olive oil. Mix until everything is evenly coated.

3. Spread the chicken and vegetable mixture onto a baking sheet and bake for 20 minutes.

4. While the chicken is baking, cook the rice according to package instructions.

5. Once the chicken is cooked through, remove from the oven and let cool.

6. In a large bowl, combine the cooked rice, chicken, cucumbers, bell peppers, Greek yogurt, and garlic. Mix until everything is evenly combined.

7. Serve the Greek Chicken and Rice Bowl warm. Enjoy!
