Greek Orzo Salad
Ingredients:
-1 cup orzo
-1/2 cup pitted kalamata olives, chopped
-1/2 cup crumbled feta cheese
-1/4 cup extra-virgin olive oil
-2 tablespoons freshly squeezed lemon juice
-1 tablespoon chopped fresh oregano
-1/4 teaspoon freshly ground black pepper
-1/4 teaspoon sea salt
Instructions:
1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions. Drain and rinse with cold water.
2. In a large bowl, combine the cooked orzo, olives, feta cheese, olive oil, lemon juice, oregano, pepper, and salt.
3. Toss to combine and serve at room temperature. Enjoy!
