Ingredients:
- 1 head of broccoli, cut into florets
- 1 cup of peas
- 1 fennel bulb, thinly sliced
- 1 leek, sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 cups of spinach
- 3 potatoes, peeled and diced
- 3 tablespoons of olive oil
- Salt to taste
Instructions:
1. In a large pot, heat olive oil over medium heat. Add the diced onions and minced garlic, sauté until fragrant.
2. Add the sliced leeks and fennel to the pot, stirring occasionally until they start to soften.
3. Toss in the diced potatoes and cook for a few minutes until they begin to brown slightly.
4. Pour in enough water to cover the vegetables in the pot. Bring to a boil and then reduce heat to simmer for about 10 minutes or until the potatoes are tender.
5. Add the broccoli florets and peas to the pot, continue to cook for another 5 minutes.
6. Stir in the spinach and season with salt to taste. Cook until the spinach wilts.
