Grilled Chicken and Aubergine Rice Bowl

Ingredients:

- 2 chicken breasts
- 1 aubergine, diced
- 2 cups cooked white rice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: fresh herbs for garnish

Instructions:

1. Preheat the oven to 375°F.

2. Place the diced aubergine on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper and toss to coat. Bake for 15 minutes or until the aubergine is tender.

3. Meanwhile, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and season with salt and pepper. Cook for 8-10 minutes, flipping once, until the chicken is cooked through.

4. To assemble the bowls, divide the cooked rice among four bowls. Top each bowl with the cooked chicken and aubergine. Garnish with fresh herbs, if desired. Enjoy!
