Grilled Chicken and Brussels Sprouts with Roasted Potatoes
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper
- 2 cups Brussels sprouts, trimmed and halved
- 2 large potatoes, peeled and cut into 1-inch cubes
- 2 cloves garlic, minced
Instructions:
1. Preheat oven to 400 degrees F.
2. Place chicken breasts in a shallow baking dish and drizzle with 1 tablespoon of olive oil. Sprinkle with salt and pepper.
3. Place Brussels sprouts and potatoes in a separate baking dish. Drizzle with remaining olive oil and sprinkle with salt and pepper.
4. Place both dishes in the preheated oven and bake for 25 minutes.
5. Heat a large skillet over medium-high heat. Add the chicken breasts and cook for 4 minutes per side, or until cooked through.
6. Add the Brussels sprouts and potatoes to the skillet and cook for an additional 3-4 minutes, stirring occasionally.
7. Add the garlic and cook for 1 minute.
8. Serve the chicken and vegetables warm. Enjoy!
