Grilled Chicken and Cucumber Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cucumber, peeled and sliced
- 1 tomato, diced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions:
1. Preheat the grill to medium-high heat.
2. Rub the chicken breasts with the olive oil and season with salt and pepper.
3. Grill the chicken for about 5 minutes per side, or until cooked through.
4. Remove the chicken from the grill and let it rest for a few minutes.
5. In a large bowl, combine the cucumber, tomato, lemon juice, and parsley.
6. Slice the chicken and add it to the bowl.
7. Toss everything together and season with salt and pepper to taste.
8. Serve the salad warm or chilled. Enjoy!
