Grilled Chicken and Tomato Lettuce Wraps
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tomatoes, diced
- 2 heads of lettuce, leaves separated
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. Preheat a grill to medium-high heat.
2. Rub the chicken breasts with olive oil and season with garlic powder, salt, and pepper.
3. Grill the chicken for 4-5 minutes per side, or until cooked through.
4. Remove the chicken from the grill and let cool.
5. Once cooled, dice the chicken into small pieces.
6. In a bowl, combine the diced chicken and diced tomatoes.
7. To assemble the wraps, place a few spoonfuls of the chicken and tomato mixture onto a lettuce leaf.
8. Roll up the lettuce leaf and enjoy!
