Grilled Chicken and Tomato Salad
Ingredients:
- 4 boneless, skinless chicken thighs
- 2 Roma tomatoes, diced
- 1 cucumber, diced
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a small bowl, mix together the olive oil, balsamic vinegar, garlic powder, oregano, salt and pepper.
3. Brush the chicken thighs with the mixture and place on the preheated grill. Grill for 5-7 minutes per side, or until the chicken is cooked through.
4. Meanwhile, in a large bowl, combine the diced tomatoes and cucumber.
5. Once the chicken is cooked, let it rest for 5 minutes before slicing into strips.
6. Add the chicken strips to the bowl with the tomatoes and cucumber and toss to combine.
7. Serve the salad warm or cold. Enjoy!
