Grilled Chicken Salad with Orange Vinaigrette
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon chilli powder
- Salt and pepper, to taste
- 2 heads of lettuce, chopped
- 1 cup cherry tomatoes, halved
- 2 potatoes, boiled and cubed
- 1 orange, peeled and segmented
- 2 slices of bread, toasted and cubed
- 2 tablespoons mayonnaise
Instructions:
1. Preheat the grill to medium-high heat.
2. Rub the chicken breasts with the olive oil, paprika, chilli powder, salt and pepper.
3. Grill the chicken for 4-5 minutes per side, or until cooked through.
4. Let the chicken cool before slicing into cubes.
5. In a large bowl, combine the lettuce, cherry tomatoes, potatoes, orange segments, toasted bread cubes and chicken cubes.
6. In a small bowl, whisk together the mayonnaise, orange juice and zest, and a pinch of salt and pepper.
7. Pour the dressing over the salad and toss to combine.
8. Serve the salad immediately. Enjoy!
