Grilled Chicken with Tomato-Onion Sauce

Ingredients:

- 2 chicken breasts
- 2 tomatoes, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh coriander, chopped
- 2 tablespoons yoghurt
- 1 teaspoon paprika
- 1 bell pepper, diced
- 1 teaspoon salt
- Juice of 1 lemon
- 1 tablespoon honey
- 1 tablespoon mustard

Instructions:

1. Preheat the grill to medium-high heat.

2. Season the chicken breasts with salt and paprika. Grill the chicken for 10-12 minutes, flipping once, until cooked through.

3. Meanwhile, in a large skillet over medium heat, add the tomatoes, onion, garlic, bell pepper, and coriander. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

4. In a small bowl, whisk together the yoghurt, lemon juice, honey, and mustard.

5. Add the yoghurt mixture to the skillet and stir to combine. Simmer for 5 minutes.

6. Serve the chicken breasts with the tomato-onion sauce. Enjoy!
