Grilled Eggplant and Banana Sandwich

Ingredients:

-1 banana, sliced
-1 eggplant, sliced
-1 tomato, sliced
-4 ounces of smoked ham, thinly sliced
-1/4 cup of crumbled blue cheese
-Salt and pepper to taste
-2 tablespoons of olive oil
-4 slices of your favorite bread

Instructions:

1. Preheat your grill or grill pan to medium-high heat.

2. Brush both sides of the eggplant and banana slices with the olive oil and season with salt and pepper.

3. Place the eggplant and banana slices on the grill and cook for 3-4 minutes per side, or until they are lightly charred and cooked through.

4. Remove the eggplant and banana slices from the grill and set aside.

5. Assemble the sandwiches by layering the smoked ham, tomato, eggplant, banana, and blue cheese on the slices of bread.

6. Place the sandwiches on the grill and cook for 2-3 minutes per side, or until the bread is lightly toasted and the cheese is melted.

7. Serve the sandwiches warm. Enjoy!
