Grilled Eggplant and Tofu Polenta Bowl

Ingredients:

- 1 large eggplant, cut into 1/2-inch thick slices
- 1 block of extra-firm tofu, cut into 1/2-inch cubes
- 1 red pepper, diced
- 1 onion, diced
- 1 carrot, diced
- 2 cups of cooked polenta

Instructions:

1. Preheat the grill to medium-high heat.

2. Place the eggplant slices on the grill and cook for 5-7 minutes per side, or until lightly charred and tender.

3. Meanwhile, heat a large skillet over medium-high heat and add the tofu cubes. Cook for 5-7 minutes, stirring occasionally, until lightly browned and crispy.

4. Add the red pepper, onion, and carrot to the skillet and cook for an additional 5 minutes, stirring occasionally.

5. Divide the cooked polenta among four bowls and top with the grilled eggplant and tofu mixture.

6. Serve warm and enjoy!
