Grilled Eggplant and Tomato Salad
Ingredients:
- 2 medium eggplants, cut into 1/2-inch thick slices
- 2 large tomatoes, cut into 1/2-inch thick slices
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
1. Preheat a grill to medium-high heat.
2. Brush the eggplant and tomato slices with the olive oil.
3. Grill the eggplant and tomato slices for 3-4 minutes per side, or until lightly charred and tender.
4. In a large bowl, combine the grilled eggplant and tomato slices with the balsamic vinegar, garlic, cilantro, salt, and pepper.
5. Toss to combine and serve. Enjoy!
